Talapia
  TIP for taking the strong fishy taste out of the fish
SOAK in Milk the night before or hours before you cook it

4-6 fish fillets
2 sticks of butter
Parsley
1 teaspoon minced garlic
Morton’s Natures Seasoning
Tasty Blend Seasoning or Lawry Salt


*Melt butter in an electric skillet-Temperature 275*
*Add minced garlic
*Sprinkle parsley over skillet
*Sprinkle seasoning over melted butter


*Sprinkle Fish with seasonings
*Lay fillet in butter
*Put the lid on for about 10 minutes
*Flip the fillets over, replace the lid
*Turn down the temperature to about 200*-250*
So that the butter is not bubbling
*Cook for about 15-20 minutes until Fish is white and tender in the middle
*You can leave it in the skillet for awhile if you are not ready to eat right away just keep the skillet on low



*OPTIONAL: You can add BREAD CRUMBS to give a fried
Sprinkle about 1-2 cup of bread crumbs
Blend in with butter and seasonings
Then stir in pint of heavy cream until desired thickness
Top with Mozzarella or Provolone cheese
     
Aunt Janie’s Guacamole

4 Soft Avocados (The small textured ones are better)
1 Large tomato
½ Medium onion
½ Lemon
3 tablespoon Miracle Whip
½ teaspoon Natures Seasoning
½ Tablespoon Garlic Pepper (Or 1 teaspoon pepper & ½ teaspoon garlic powder)
1 teaspoon Salt

*Cut avocados in half, and then take out the seed
Squeeze the avocado in bowl, and then smash
*Grate the onion and tomato in a separate bowl,
Pour into avocados
*Squeeze lemon into bowl of avocados
*Add Miracle Whip (For people who say they Don’t LIKE miracle whip will not be able to taste it, but it makes this recipe
*Add seasonings
*Once all ingredients are mixed up, you can season to taste with seasonings or lemon
*You can dice an extra tomato for texture
 

 

 

Cheesy Grouper
1cup Hellmann's mayonnaise
2 cup Shredded Monterey jack Cheese
1/2 cup onion
1teasoon Morton Seasoning
1teaspoon Hot Sauce
1teaspoon Tasty Blend Seasoning
4 grouper fillets
1/2 stick butter


Pan sear grouper in pan a couple minutes on each side. Don't cook completely. Transfer to baking dish
in small saucepan cook onions with butter until tender.

Cheese Mixture    
In a bowl add cheese, mayo, hot sauce, tasty blend seasoning, Morton's seasoning and onions.
Spread over grouper in baking dish cook for 15-20 minutes until fish is done.
 
Alfredo Mushroom Rice
2 tablespoons of butter
1-2 tablespoons minced garlic
4 ounces sliced mushrooms
1 container of chopped tomatoes onions green peppers
1/2 teaspoon of lemon pepper
1 pouch pre cooked long grain rice
1/2 alfredo sauce
2 tablespoon parmesan cheese

Preheat large sauté pan on med heat. Cook onions for 3 minutes, add tomato onion mixture cook for another 3 minutes Stir in rice, alfredo sauce, and cheese, cook over low heat for 5 minutes.


Serve grouper over rice and Enjoy!

Ingredients
Fresh Cobia
flour
egg
crumbled red tortilla chips
mayonnaise
minced garlic
poblano peppers
lime juice
salt
ground pepper
 
Preparation
Preheat oven 350 degree
Squeeze fresh limes on cobia 2-3 limes
Place Cobia in bowl of flour,bowl of egggwash, bowl of tortilla chips
DO ONLY ON SIDE OF FISH WITH RED TORTILLA CHIPS
Place cobia in skillet torilla side down at low-med temp for 1-2 minutes
Flip cobia and cook other side 1-2 minutes
Remove Cobia from skillet and place on an oven pan with oil and put in the oven for 3-4 minutes

Top cobia with Poblano Lime Aioli Sauce
 
Sauce
1 cup mayonnaise
1 tsp minced garlic
1/4 cup poblano peppers roasted, peeled, seeded, and chopped
1 tbsp lime juice
1/4 tsp salt
1/4 tsp ground pepper
